Champagne F. Cossy, AOC Champagne Premier Cru, Montagne de Reims

With a 13-generation history, the Champagne house of Francis Cossy from the Montagne de Reims region is a wonderful grower champagne house, operating a 7-hectare vineyard in the northern part of the region. The entire production process is controlled by A-Z’ini Sophie, the current owner of the house. This wine is as zesty and bright as Sophie herself! This is a Brut Champagne made from three equal parts of Premier Cru vineyard grapes, aged on the vats in autolysis for a minimum of 3 years – normally this would already be a requirement for a vintage wine! Sophie also takes exceptional care of her vines, and is currently in the process of applying for BIO certification for her vineyards! A Champagne with notes of yeast, fine bubbles and a pleasantly vinous body that will leave no one cold!
